Coffee

Coffee legends

There are many legends about coffee and how its stimulating effect was discovered. One of the oldest tells the story of a young shepherd from Ethiopia, who around 850 AD, noticed that his goats after eating a certain variety of berries are particularly lively.

Then the monks wanted to take advantage of these berries, but they were very disappointed in their bitter taste, so they threw them into the fire, finding them useless. After a few minutes, an unprecedented, delightful aroma reached their nostrils. Curious about the wonderful smell, they decided to prepare a decoction of roasted coffee beans. Later, they considered this drink a gift of Heaven, because it kept them awake all night.

When really start dringing coffee for the first time?

The coffee drinking ritual began to spread in the 16th century in Istanbul - the first cafe was also established there. Initially, it met with great opposition, but at the end of the century almost everyone became supporters not only of this black drink, but also socializing over a cup of coffee. Gradually, more and more cafes began to appear in Europe. The first European to describe coffee was the German traveler Leonard Rauwolf. Initially, coffee was treated as a drink of Satan, but when Pope Clement VIII denied these ridiculous rumors, people lost all resistance to reaching for the proverbial little black dress.

How to drink coffee - coffee types explained

Coffee and its various types, served in a cup or glass, are a must for many people every morning. For me it is such a small pleasure that allows you to start each day with a smile. But wait, wait ... Coffee is uneven coffee! All you have to do is go to a nearby cafe and you will see mysterious names, i.e. different ways of serving divine coffee. It's good to know what's really under the name ristretto or lungo to choose your favorite flavor, and even prepare it at home and give it to your guests.

Espresso

The perfect way to get up quickly! Espresso is an infusion prepared from finely ground coffee beans in a special espresso machine. The name probably comes from the Italian adjective "espressivo", meaning "expressive". And this is what perfectly characterizes this coffee - its distinct taste, smell and color! Typical Italian espresso is brewed most often with a blend of different types of coffee. On the surface of perfectly brewed coffee floats a thick nut-brown foam - "crema". I reach for espresso when I need a quick kick! This is my proven way. I drink them with and without sugar. It's the perfect base for cappuccino or latte macchiato.

Ristretto

Ristretto is basically a double power espresso! Also prepared in the espresso machine, but using two times less water than when brewing an espresso. This method of preparation makes the brew have an intense but quite tart taste. It is because of this specific taste that it is considered a "drink for connoisseurs." I recommend drinking a small cup of ristretto boldly - in one gulp! It is also recommended to give a glass of water (non-carbonated!) For this type of coffee. If you drink coffee with sugar, add only the white version to the ristretto. Brown sugar could change the taste of coffee. Served in a warmed cup for a classic espresso or in a smaller version.

Lungo and Americano

Why did I throw Lungo and Americano coffee in one bag? Because both types are based on espresso with more water. However, they differ in volume and method of adding water. "Lungo" is Italian for "long", and the name comes from the "extended" espresso, which is the characteristic way of brewing. After obtaining the proper espresso extract, do not stop brewing, but continue until you get three times the volume. Such coffee is more delicate in taste, but still aromatic. In turn, Americano is prepared by adding hot water to espresso.

Cappuccino

Cappuccino is a well-known to all Italian coffee drink, whose main ingredients are espresso and frothed milk. This delicious mousse is often sprinkled with cocoa or loose chocolate. The secret of a perfect cappuccino is properly frothed milk, which makes the foam creamy and free of visible air bubbles. Attention attention! Italian standards clearly define the thickness of the foam - it should be from 1 to 2 centimeters. The beautiful nutty color of cappuccino makes me always drool at the sight of such a drink! For serving cappuccino, porcelain cups and saucers, 150-200 ml, are perfect. Don't forget to add a shortbread cookie or butter biscuit!

Caffe Latte

Extremely milky and mild coffee served in tall glasses won not only Italian hearts, but also gained popularity among people around the world. I can't name a cafe that doesn't serve this classic. I drink caffe latte not when I want to get up quickly, but when I want a sweet dessert. It goes perfectly with various flavor syrups and sprinkles, so it can be a way of sweet "something".

Latte Macchiato

Latte macchiato is also a good option for lovers of milk foam! This does not mean, however, that this type of coffee does not have stimulating properties. Quite the opposite - its base is espresso, which we add to hot milk. Macchiato is sometimes confused with ordinary latte, so it's worth knowing the difference. With caffe latte, lightly frothed milk is added to the espresso, and in the case of latte macchiato the order is a little different. Pour hot milk into the bottom of the glass, add milk froth, and only at the end pour the espresso - carefully, on the sides of the dish. In this way, 3 effective layers are created - milk at the bottom, coffee in the middle and foam at the top! Milk plays a significant role here, which is why coffee is extremely delicate in taste, and at the same time very filling.

Mocha (Mokka)

Mocha coffee is the perfect choice for chocolate lovers! A perfect combination of aromatic, strong coffee and thick chocolate. You can't resist such a combination! Unlike cafe latte or cappuccino, mocha cannot boast of milk foam. Instead, it has other divine additions: whipped cream and cocoa or cinnamon sprinkles. Pour delicious chocolate and a portion of espresso into a glass dish. Choose the first ingredient as you like - chocolate can be milk, bitter or even white! Gently mix the tasty ingredients and decorate the top with whipped cream. To make the mocha look even more beautiful, sprinkle with whipped cream, cocoa or cinnamon. The very appearance makes the saliva drip!

Strongly chocolate mocha coffee is served in glasses similar to latte macchiato - tall, with quite thick walls, with a capacity of about 200 ml. This glass nicely displays all the ingredients of a coffee drink! Fluffy whipped cream, sweet chocolate and strong coffee are a blissful combination. I assure you!

Irish coffee

So Irish coffee, which is distinguished by the addition of Irish whiskey. There are also different varieties of this coffee, served with other liquors (with vodka, cognac, sherry, rum or Scotch whiskey - to choose, to color ...). Irreplaceable on cooler days, when you need to warm up your body quickly. It works on me right away - stimulating and warming up! This is definitely my favorite in this field. The combination of all the necessary ingredients makes us gain coffee with an unusual taste and aroma.

Flat white

Flat white is coffee with the addition of milk, but its preparation differs from what we can imagine. For many, this coffee with milk is simply associated with pouring ground coffee beans with boiling water and adding a little milk. This is a mistake! Flat White is prepared slightly differently. Double espresso is poured with hot, only slightly frothed milk (preferably full fat!). How is it different from caffe latte? And the fact that there is not so much fluffy foam that tops the glass with latte. As the name suggests - "flat white", in English "flat white" means a flat, milky surface without any high foam, whipped cream and additives.

Cafe Frappe

You already know my ways to warm up, but I also have an idea to cool down on hot days! There is one answer: cafe frappe, i.e. iced coffee (also known as Greek coffee). Unlike previous espresso-based coffee recipes, instant coffee is all we need. Pour a few tablespoons of instant coffee with water and milk, and add sugar. Mix everything with a small mixer or use a shaker. Thanks to this combination of ingredients, you will get a light foam that will surely appeal to our palate. Add ice cubes to the coffee to make it as refreshing as possible.

Why some coffee beans are so special ?

In the modern world. And yet, these are the only two trees which are cultivated in North Africa, the Middle East, the Mediterranean, China and Japan respectively. In many cases they are grown in small gardens in remote locations, far from any human population. This means that it is impossible to have a reliable assessment of how coffee is grown on these remote lands.

However, as mentioned above, the research of the Swiss research team has shown conclusively that most coffee grows only from the ground, in coffee trees. The soil is the important factor. But there is a growing interest among the coffee companies in using different techniques to control the water supply.

In addition, several companies already use chemical fertilisers as fertilizer which are far from beneficial to coffee trees. The most important technology they use is to mix up large amounts of different chemicals. But this has been shown to destroy the coffee tree's natural water and fertilizer supply even without adding fertiliser:

This was done in 2011. So it is not clear that the use of other treatments for coffee trees have actually helped. In 2010, Dr. Zdenek M. Smedek and Dr. Peter J. Siegel, from the department of Plant Biology at the University of Leuven, in Belgium, published an article in the Scientific Bulletin of the Institute for Integrative Food Science (ISFC), which states that the use of artificial fertilisers for green beans is not helpful because they damage the water system and the food chain:

It is known that coffee plants grow naturally with water and fertiliser. For some time, the idea has been promoted that it is necessary to use synthetic fertilisers. But such synthetic fertilisers, even if used properly, do not cause the soil to become deficient in water. In fact, in some places, where coffee plantations are being used, this artificial fertiliser is being used to increase coffee yields. This is not the solution we all want for our coffee plantations: the situation is very challenging in many coffee regions and we need to develop methods that improve these conditions for sustainable coffee growth.
