Two men, one wooden platter, and an open wood fire doing all the talking. What I like here is that nothing is hidden: the vegetables are still raw and bright next to the fish, and the flames sit at eye level with the food, so you can almost hear them crackle. The French captions and the arrows give it a local cooking show energy instead of a polished studio look, which suits that outdoor setting far better. Question for this community: when fish is fried over wood like this, do you salt it before it goes near the fire or only after it comes off? I keep hearing both from people who cook it every week.
